Are the hosts on the local datastore. then i could say build a new vcenter and add the host to then. every thing that is on the datastore should stay there. you could use your vsphere client and login to the host directly and copy the files to a different disk (local computer) or so.
if the hosts are on a SAN or something like that then no problem
