I agree with Gorteeregarding the DVS as that would be a limiting factor.  Since it's a single host there's no need for DVS anyway (unless you needed the ability to sniff traffic natively).  I use the full blown vCenters on my main datacenters, but I have a bunch running exactly as you mentioned (approximately 60 sites with single host + VCSA + vStandard Switch).  No issues.  Nice thing is you can set the auto start-up order since you're not using HA.
