Working as a consultant, my experience is seeing roughly an equal split between AMD and Intel environments running all sorts of application including DB, mail, web and applications - the thing to keep in mind like any technology is they will alternate being the high tech leader in the CPU market so if you are building out a complete environment I would look at the CPU that delivers the best performance for the dollar
