I would do option C as well. Do you know with any measure of certainty that this will not delete the actual data that is stored on the pre-existing datastore when I add the hosts to the cluster?

Yes, I do this operation all the time. All joining a cluster does is pool compute and memory. Has no affect on any storage operations.
